French Toast Roll-ups with Banana and Blueberry Filling

Last night I made regular (clean) French toast and it was so good that I had to make it again this morning, with a twist!

What You Need

  • one banana
  • a handful of blueberries
  • six pieces of whole wheat bread
  • coconut oil
  • two eggs

Now what?

  • mush your banana and put in a bowl – I cut mine up into pieces and put it into a ziplock bag to mush with my hands so that there were no chunks left
  • cut up your blueberries real small and add to the bowl with the banana mixture
  • in a separate bowl, crack and mix your two eggs
  • roll out each piece of whole wheat bread until flat
  • get out your pan and melt a small amount of coconut oil
  • spoon a small amount of the banana/blueberry mixture onto the very end of one piece of whole wheat bread, then take that end and roll it up
  • cover the entire roll in egg
  • take your roll and place it in the pan right on the seam so that it will create a seal and keep from opening
  • continue to turn your roll so that it gets cooked on all sides
